- 3 medium apples (Granny Smith or Honeycrisp), cored and chopped into 1-inch pieces
- 1 tablespoon butter (unsalted)
- 4 cups water
- 1 cup steel-cut oats
- 1 pinch salt
- 2 tablespoons maple syrup (plus more for serving)
Instructions
- Melt the butter in a large saucepan or Dutch oven over medium heat. Add the steel-cut oats and toast them for about 2 minutes, stirring often until they smell nutty and fragrant.
- Pour in the water and add the chopped apples and salt. Stir well and increase the heat to high to bring the mixture to a rolling simmer.
- Reduce the heat to medium-low to maintain a gentle simmer. Cook for 30 to 35 minutes, stirring occasionally, until the oats are tender and the mixture is creamy.
- Remove the pan from the heat and let it sit for 5 minutes to thicken further. Stir in the maple syrup, taste, and add more sweetener if desired before serving warm.
Notes
You can substitute coconut oil for butter to make this dairy-free. Leftovers store well in the fridge for up to 4 days.
