Description

These tender, melt-in-your-mouth Wedding Cookies are packed with buttery almond flavor and coated in a double layer of powdered sugar.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup chopped almonds
  • 1 cup (2 sticks) butter, cold
  • 1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons water
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. In a medium bowl, cream together the butter and sugar with an electric mixer until light and fluffy, about 2 minutes.
  2. Add the vanilla extract and water, mixing until just combined.
  3. Sift in the flour and add the chopped almonds, beating on medium-high speed until a dough forms.
  4. Cover the bowl and refrigerate for at least 1 hour to firm up the dough.
  5. Preheat the oven to 325°F (165°C).
  6. Shape the dough into 1-inch balls and place them on a baking sheet.
  7. Bake for 16 to 19 minutes, or until set but not browned.
  8. Let cool for 5 minutes, then roll in powdered sugar while warm.
  9. Allow to cool completely before rolling in powdered sugar a second time.

Notes

Ensure nuts are chopped finely to prevent the cookies from crumbling. Store in an airtight container.
