Description

A wholesome and moist banana bread made with whole wheat flour and naturally sweetened with honey. Perfect for breakfast or a healthy snack.


Ingredients

  • 1/3 cup (75ml) melted coconut oil or olive oil
  • 1/2 teaspoon fine sea salt
  • 2 large eggs, beaten
  • 1 teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (170g) honey or maple syrup
  • 1 3/4 cups (220g) white whole wheat flour
  • 1/4 cup (60ml) milk of choice or water
  • 1/2 teaspoon ground cinnamon
  • 1 cup (225g) mashed ripe bananas (about 2 large)

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9×5-inch loaf pan with oil or cooking spray.
  2. In a large bowl, whisk together the melted oil and honey until combined. Add the eggs and beat well, then stir in the mashed bananas and milk.
  3. Whisk in the baking soda, vanilla, salt, and cinnamon until fully incorporated into the wet mixture.
  4. Switch to a large spoon and stir in the flour gently, mixing just until the flour disappears. Do not overmix.
  5. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store at room temperature for up to 3 days or refrigerate for up to a week. This bread freezes well for up to 3 months.
