  • 1/2 cup pepitas (green pumpkin seeds)
  • 1 cup slivered almonds
  • 1/2 cup chopped dried cranberries or cherries
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine salt
  • 1 tablespoon pure vanilla extract
  • 1 cup large, unsweetened coconut flakes
  • 1 cup hemp hearts

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper to prevent sticking. In a large mixing bowl, combine the rolled oats, slivered almonds, coconut flakes, pepitas, cinnamon, and salt until they are well mixed. This ensures that every spoonful of your Muesli will have a balanced distribution of flavors and textures.
  2. Pour the maple syrup and vanilla extract over the dry ingredients and stir thoroughly until everything is lightly coated. Spread the mixture out in an even layer on your prepared baking sheet. Bake for 13 to 15 minutes, tossing the mixture halfway through cooking to ensure the oats toast evenly without burning at the edges.
  3. Once the mixture is lightly golden and fragrant, remove the pan from the oven and place it on a wire rack. It is crucial to let the Muesli cool completely to room temperature on the baking sheet, as it will continue to crisp up as it cools.
  4. After the mixture has fully cooled, stir in the dried cranberries and hemp hearts. Transfer your finished cereal to an airtight container or freezer bag, squeezing out as much air as possible to maintain freshness.
