- 1/4 cup melted coconut oil
- 2 tablespoons maple syrup
- Pinch of cinnamon (optional)
Instructions
- In a large bowl, whisk together the oat flour, baking powder, salt, and cinnamon until well combined and free of lumps.
- In a separate bowl, whisk together the milk, melted coconut oil, eggs, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Let the batter rest for 10 minutes to allow the oat flour to absorb the liquid and thicken.
- Preheat your waffle iron according to the manufacturer’s settings.
- Pour the batter onto the preheated iron and cook until golden brown and crispy.
- Transfer to a wire rack to cool slightly before serving to maintain crispness.
Notes
